Designed as a party-sized premix which is packed full of tastes of a holiday season, rendering it ideal for your festive gathering. Save the extra syrup to use in brunch beverages, puddings, or to make another batch of the drink.

To make the Citrus Syrup (produces 750ml)
300ml recently pressed clementine juice
200ml fresh lemon juice
500g caster sugar
To make the Drink (makes 850ml, serving 10)
400ml premium vodka
100ml classic gin
150ml peach schnapps
200ml clementine syrup (as made above)
Fresh cranberries, to garnish
Mandarin essential oil, for finishing
Instructions
Making the Syrup: Put all the items inside a pan, heat until it reaches a light boil, agitating to dissolve. Next, turn off the heat and leave to cool entirely. Transfer into a sterilised bottle, close it keeping it chilled, where it will keep for about a month.
Preparing the Batch Mix: Mix all the liquids into a big jug, let it rest for an hour, then filter it preferably using muslin, so it's fully clarified.
When ready to serve: Pour 85ml of the batch mix to a mixing glass filled with ice, and stir carefully for a minute until cold. Filter into a chilled martini glass or equivalent, top with a few cranberries and finish with a quick spritz with the mandarin essence above the glass.
